I have a tamarind problem in my Pad thai recipe? - where do you find tamarind concentrate in the store
Most recipes call for tamarind, Pad Thai, but did not find before. Finally I found a store of tamarind in India.
One of them was a block of tamarind wrapped in black plastic. Won second place and a small jar of tamarind concentrate, which was very dark black. The third was made a glass of tamarind sauce from Knorr. It was red.
I thought it was very strange, b / c I ate Pad Thai before, and usually has a reddish color. But the tamarind I found here everything is black except Knorr tamarind sauce. I bought tamarind concentrate, and I think I've made a mistake buying this.
Did I buy the right ones? I read somewhere tamarind is to be red, but not too dark black sauce. How do I use this black tamarind concentrate? Thai my book would be very dark?
I want to do something really good Pad Thai, the best for my palette. I do not know how serious fat pad Thai are sold in my local Thai places.

do not worry .. Tamarind concentrate exactly what to buy. I have never seen a tamarind red ... still have something else mixed with it. Laxmi brand I use tamarind concentrate, and it works very well .. This is not really black Tho .. is dark brown. But I think we speak the same. Good luck with your Pad Thai!,
Tamarindo naturally darker in the course of time. The Fresh tamarind paste has a brick red-brown. Both taste good. I do not think that Thailand would be your black book, and use only a little. The closest substitute I've found unsweetened (tastewise) rhubarb is cooked and pureed. It sounds disgusting, but there is no reason why you can not use rhubarb in savory recipes.
